Description

A tasty pumpkin cheesecake that we had for the December potluck.

Ingredients

12ozfirm silken tofu (pureed)
8oznondairy cream cheese
1ccanned pumpkin
1cgranulated sugar
3Tflour
1⁄2tginger (ground)
1⁄2tnutmeg
1 1⁄2tcinnamon
1⁄8tsalt
1⁄4tbaking soda
1 graham cracker crust

Instructions

Preheat the oven to 350°F. Puree all the ingredients except the pie crust in a food processor and pour into the graham cracker crust. Bake at 350°F for 50 minutes. Allow to cool for 30 minutes, then cover with plastic wrap or the top of the pie container.
